So, today, I’m going to show you how to make a Sazerac. So, originally, this recipe called for cognac, but apparently, there was an infestation in the vines over in France and it wiped out heaps of the vineyards, so therefore, the cognac changed over to rye whiskey. So, it’s up to you, depending on your taste, HHHHHHHHwhether you prefer a cognac or a rye whiskey. Today, I’m going to be using a rye.

So, first of all, you want to start by rinsing your glass with absinthe. This particular bottle I brought over from the Czech Republic. It’s got thujone and everything in it. I haven’t tried it yet. It’s been on this shelf for about seven years, so why not make an awesome Sazerac with it?

So, you just add in just the tiniest little amount, and you basically just want to rinse the glass with absinthe. So, I’m going to fill this glass with crushed ice and just set that aside.

So, add a single sugar cube to the bottom of your mixing glass and Peychaud’s bitters, if that’s how you pronounce it. I’m not sure. Add three dashes. Then, Angostura bitters, add two dashes. Now that it’s soaked, it actually muddles quite easily.

Okay. So, now you would add two shots of rye whiskey, and add that to your mixing glass. Now you want to fill your mixing glass with ice and stir for about 25 seconds. I’ve really got to invest in a more stable bench.

So, now the drink is ice-cold. It’s diluted. You want to empty your glass. So, it’s important that the glass is ice-cold. It’s got these beautiful aromatics from the absinthe. And you want to sit that down and strain into that glass. And for garnish, just a lemon peel, and just give it a squeeze over top and rim the glass.

And there you have a Sazerac. Cheers.
