Step 1 – Add 60mL Gold Rum into cocktail shaker
Step 2 – Add 15mL Dry Curacao
Step 3 – Add 30mL Fresh Lime Juice
Step 4 – Add 15mL Raspberry Syrup
Step 5 – Fill your cocktail shaker with ice
Step 6 – Shake it
Step 7 – Strain into ice filled glass
Step 8 – Garnish with a piece of orange and some fresh raspberries

Hi guys, and welcome to yet another one of my cocktail videos. Today I’m going to show you how to make Knickerbocker. I can’t believe I’m fast encroaching on a hundred days straight, and I really appreciate all the positive feedback I’m getting from everyone. Loads of likes, comments, shares. That’s fantastic.
So the Knickerbocker is an old, classic cocktail. If you do want to hear a little bit about the history, I’ll link below. So let’s get started. Just to let you know, today, I’m going to be using an aged rum. The original recipe does call for a gold rum from the Virgin Islands. So something similar, you could use a Puerto Rican rum, something from Trinidad, but generally a golden rum, a little bit lighter in style. Something like Bacardi will work perfectly in this drink.
So I’ve got my cocktail shaker and measure a double shot. So a double shot, 60 mills of rum, and then half a shot of Curacao, so 15 mills. It will change the cocktail slightly, but if you don’t have Curacao, you can Cointreau or triple sec. Then we have freshly squeezed lime juice, so 30 mills, have that straight in followed by your raspberry syrup, so it’s just a sugar syrup with fresh raspberry crushed up into it, 15 mills, half a shot, add that straight in.
Now, for your cocktail, shake with ice and give it a shake. Pour your double old fashioned glass with ice and strainer at the top. So let’s top that up with crushed ice and garnish with a piece of orange and some fresh raspberries. And there you have a Knickerbocker. Cheers.
I haven’t had a Knickerbocker in a while. That’s my new favorite drink. I think I’m going to live off these for the next month or so. If you’re going to be mixing one of the drinks that I’ve made in the past week, make sure this is at the top of your list.
